This fizzy apple Pimms cocktail is like apple juice, but better. And also for adults only.
Do your parents have a favorite drink that you inevitably learned to love as well? My parents love making Pimm’s cocktails for parties so of course I’ve always had a sweet spot for it. Their version involved champagne, Sprite and an assortment of fruits, cucumber, lemon and often mint, which is good but I kept mine simple with apples.
Never heard of Pimm’s? Don’t fret! That’s probably because most of you are from the States and Pimm’s is British. It has a couple varieties but I tend to prefer Pimm’s #1, a gin-based liqueur. If you’re convinced after reading this that you should try some (and I hope you are) you can find this historically British drink in any places you usually buy liquor.
Alright, now that y’all have had a little history lesson let’s get back to why this drink is SO delicious.
Pimm’s tends to be a summer drink but to add a cold-weather twist, I focused on everyone’s fall favorites: apples! Apple juice helps lighten the drink while also maintaining its rich dark color. Plus the apple slices in the drink soak up all of the yummy flavors and make for a great snack once you’re done sipping on your Pimm’s cocktail.
This week has been pretty hectic for a number of reasons, all of which I thought made it clear that I deserved a few of these fizzy apple Pimm’s cocktails. First up, the cat got sick (again) and finally underwent the surgery that should prevent him getting this in the future. Sidenote if you’re looking for a reason to get pet insurance, use my story as an example of why it is so important. Expenses can add up for little furry family members so it’s important to be fiscally responsible (and able to get them the care they deserve).
Next up, the hubby and I drove 11 hours from my parent’s place in Canada back to Michigan (in one day) in order to get back in time to see the cat when he got out of surgery. Luckily the drive was snow-free for the most part and we avoided all of the potential traffic spots. Lastly, and this is less of a stress but more of a life hassle, it is just so cold outside. Cold to the point where everything is closed (I’m looking at you car wash) and walking the dog gets reallllly tough. In the big scheme of things these aren’t the worst problems to have but they are my reality so I’ll continue to reward myself to some Pimm’s cocktail for successful making it through the day.
Yields 4 Glasses
- 1 cup (8 ounces) Pimm’s #1
- 1 cup apple juice
- 1 bottle of Cava of your choice
- 2 apples, sliced
- Add two ounces of Pimms, 2 ounces of apple juice and a hand full of apple slices to each of the four glasses.
- Top with cava.
- Enjoy immediately.
