I love making dishes with cream cheese because it’s so versatile. It can be used in sweets just as easily as it can be used in savory dishes.
Last year around this time I made a s’mores cheese ball for a Super Bowl party. It was a big hit. Let’s be real, it’s hard to go wrong with anything s’mores themed. This year, I wanted to focus on one of my other favorite crowd-pleasing flavors: peanut butter!
I told one of my brothers that I was making this and he described it as the perfect way to ingest a lot of calories. I like to think it’s just the perfect way to get your protein. You decide which way you want to look at it. Either way, my fiance and I inhaled most of this immediately after the photos were done. I didn’t even wait to upload them to make sure they were good. When reached for a comment about it, he said it was good. This is probably why I have the blog and not him, I’m much better at elaborating on my food. But I digress.
The question on everyone’s minds at this point is likely: Charlotte, why a cheese ball? My answer? Why not a cheese ball. That’s thoroughly unhelpful as far as answers go though so here are some real reasons
- It’s visually impressive. I know, I know, don’t judge a book by it’s cover. Except that’s exactly what I do so why shouldn’t I bring sweets to a potluck that I know will stand out from the crowd? Make it delectable looking and wow your fellow potluck-goers.
- It’s so easy. This recipe is pretty much dummy-proof so even those of you who claim to hate cooking, baking and everything can pull this together while watching quality television like the Bachelor.
- It’s shareable. Perhaps most importantly this dish is easy to share. Everyone can dip into this treat with some nice and salty pretzel crackers (a must when enjoying sweet dips), making it easy to share and easy to feed large numbers. I’m using the word easy a lot to reinforce my previous point above. Is it working?
So there you have it folks, the peanut butter ‘cheese’ ball. What will you be making for the Super Bowl?
- 1 8-ounce package of cream cheese
- 1 cup of smooth peanut butter
- 1 teaspoon of vanilla extract
- 2 ½ cups powdered sugar
- 1 cup Reese’s Pieces, divided
- In the bowl of a stand mixer, combine the cream cheese, peanut butter and vanilla extract. Beat until smooth and combined. Mix in the powdered sugar, ⅓ at a time. Roughly chop ½ the Reese’s Pieces and mix into the cream cheese peanut butter mixture.
- With clean hands, form mixture into a ball and wrap in plastic wrap. Refrigerate for at least an hour. Once firm, remove from fridge and cover with leftover Reese’s Pieces. Return to fridge or enjoy immediately.
