Okay, maybe not but am I the only person who has taken down my Christmas tree and decorations? Glancing out onto neighboring buildings from my balcony today, in a completely not voyeuristic way, I noticed tons of glittering lights on trees in my neighbors’ windows. In their defense I did only take mine down this weekend but now that I’ve done it, I feel like everyone else should too.
During my decoration cleanup this weekend, I discovered far more Christmas sweets than I expected to. I couldn’t believe how much leftover Christmas candy and cookies I still had lying around. Ever my mother’s daughter I couldn’t just throw it out so I did what I do best – I threw it all into a batch of ice cream!
I should probably explain my reasoning for cleansing my apartment of all holiday-related objects. Since I didn’t take time off during the holidays I’m jetting off to the beach this week for an extended long weekend with my family. Rather than come back midway through the month so dying holiday greens and stale cookies, I thought it best to tie up loose ends before leaving.
If you are looking to do something with your leftover holiday sweets, make a batch of the ice cream below and adapt it to incorporate what you have on hand!
- 2 Cups heavy cream
- 1 Cups milk
- ¾ Cups sugar
- 3 Large egg yolks
- 1 Teaspoon vanilla extract
- ¾ Cups chopped up Hershey’s Candy Cane Kisses
- ¾ Cups chopped up gingerbread cookies
- Heat milk and heavy cream over medium high heat until simmering
- Meanwhile, in large bowl combine sugar and egg yolks, whisking vigorously
- Mix in vanilla extract
- When the milk and cream mixture has heated, temper into the sugar and egg mixture
- Refrigerate until cool, about 8 hours
- Once cool, churn according to manufacturer’s instructions
- When ice cream is nearly done, mix in candy and cookies
